Super Bowl Parties are the easiest kind. The schedule is set and well-defined. The only entertainment you need to provide is a good working television, the bigger the better, and plenty of food ready on trays, so it is easy for the crowd to eat whenever they want. In fact, if you are not a football fan, you can prepare all this ahead of time, make it easily accessible, provide paper towels, coasters, and a big trash can within 'field goal' range, and have some time to yourself, whether it is curling up with a good book, shopping or whatever you would like to do. At this time of the year, it is really hot outside and serving meals that are lighter in volume is important. Fresh fruits such as: peaches, mangos and berries plus jars of local honey are now at their peak and the best quality is purchased at roadside stands and orchards.Peaches were originally grown in China some three thousand years ago and later appeared in Persia(Iran)and Russia by Chinese traders dropping peach pits along their trade routes. The Spanish brought peaches to the Americas.A summer meal begins with a cool peach drink adding either a shot of rum or it can be made non-alcoholic as well.Peach Nectar Surprise In a tall glass filled with crushed ice1/2-cup peach nectar 1-shot rum Tonic water or a favorite lemon/lime soda A slice of peach A sprig of mint Directions: Combine the peach nectar and the rum pouring it over the crushed ice. Add the tonic water or the lemon/lime soda to about three-quarters full to the top of the glass. Stir the ingredients and garnish with the peach slice and the sprig of mint.Poultry in the form of game hens are basted with a mango, peach and honey sauce and the crunchiness of chopped mint then roasting them until they are done. Any leftover sauce can be spooned over the game hens just before serving. A bowl of fluffy white rice and some sliced cucumbers are all that is needed to complete the meal.Game Hens With Peach, Honey and Mango Sauce (Serves 2)2-game hens, thawed and rinsed with salt water removing any giblets in the cavity. 2-peaches, rinsed, peeled and chopped 1-mango, rinsed, peeled and chopped 1/2-cup local honey 1/2-tsp. chopped fresh mint or dried 1/4-cup rose wine Salt & pepperDirections: In a saucepan: combine the peaches, the mango and the honey. Cook on medium-low until the peaches, mango and honey are soft. Add the wine and the mint. Cook for five minutes more stirring frequently. On two sheets of foil:Place the clean game hens and baste them with the sauce. Cover them with the foil and roast in a pre-heated 350 degree oven for about an hour and a half. Spoon on some of the left over sauce and serve.Beating the heat is easy with a fresh peach salad that contains some finely chopped red onion, mint,toasted almonds and served over a mound of fresh garden lettuce then tossed with a light olive oil and balsamic vinaigrette dressing.Fresh Peach Salad (Serves 4)3-large ripe peaches, rinsed, peeled and sliced 1/2-cup red onion, sliced thin and finely chopped 3/4-cup Almonds, thinly sliced and toasted 2-heads leafy green lettuce,torn into pieces 1/2-tsp. chopped or dried mint 1-Tlb. light olive oil 1-tsp. balsamic vinegarDirections:In a salad bowl:Lightly toss the peaches, the red onion, the mint, the almonds and the lettuce. In a separate bowl: Whisk the olive oil and the balsamic vinegar and combine with the salad ingredients. Serve with grilled chicken and a slice of whole grain bread.A delicious finish to a summer meal is fresh peaches, berries such as: raspberries, blueberries or blackberries, kiwi fruit and some local honey and cool mint.Fresh Peach Dessert (Serves 4)4-large peaches, rinsed, peeled and sliced 1/2-cup of either blueberries, raspberries or blackberries 1/2-tsp of chopped or dried mint 1-tsp. local honey 2-kiwi fruit, rinsed, peeled and thinly slicedDirections: Combine the ingredients and chill until ready to serve. This Bundt cake is an excellent cake to take to picnics, pitch-in meals, church socials, etc. This Lemon Cake recipe uses cornmeal and buttermilk, making it different than the usual lemon cake. It is so good it has been dubbed as a "Lick the Platter Clean" cake. Make it soon and find out for yourself how quickly it will disappear.LICK THE PLATTER CLEAN LEMON CAKEVegetable oil spray with flour2 1/2 cups all-purpose flour1/2 cup yellow cornmeal2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 cup unsalted butter1 3/4 cups sugar1 tbsp grated lemon peel1/4 cup lemon juice4 large eggs1 cup buttermilkPreheat oven to 325 degrees. Coat a 10-cup Bundt pan with the vegetable oil spray; set aside.In a medium mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt. In a large mixing bowl, beat butter, sugar, lemon peel, and lemon juice with medium speed of electric mixer until light and fluffy. Beat in the eggs, one at a time until blended. Turn mixer to low and alternately beat in the flour mixture and buttermilk until the batter smooth. Scrape into the prepared pan; level the top with a spatula. Bake in the 325 degree oven 55 to 65 minutes until a wooden pick inserted in the center comes out clean. Remove from oven and cool in the pan on a wire rack for 5 minutes.Sugar Glaze:1 cup sugar1/3 cup lemon juiceWhile cake cools, whisk together the sugar and lemon juice in a small bowl just until combined. (Sugar will not be totally dissolved.) Invert cake from the pan onto the rack. Place a baking sheet under the under the rack. Using a pastry brush, brush the glaze all over the hot cake until absorbed (sugar crystals will still be evident.) Transfer to a serving plate and cover. Lemon trees laden with their winter crop, boughs drooping under the weight of many hued lemons: dark green, lighter green becoming suffused with yellow, vibrant yellow bursting with life, then as they go unpicked and overripe a flush of orange seeps into the knobbly fruit. Until I came to South Africa lemons came from a shop: smooth, uniform yellow skins all year round. Now I have learned to appreciate their seasonal bounty, struggling to use up all the fruit in winter, hoarding away the squeezed juice of the excess lemons in the freezer for summer, when the lemons must come from the shop again and are more expensive and less juicy.This is the time to think up a hundred and one ways to use a lemon, to dig out all the recipes requiring a lot of lemons: Lemon Curd, Lemon Cake, Three Fruit Marmalade with grapefruit and lemons to balance the sweetness of the oranges. Jane Grigson's Fruit Book has a wonderful sounding Lemon Tart recipe, that I can't wait to try, it sounds like the sort of marvel you'd get from a good French patisserie.Roast chicken can be kept moist and succulent as it roasts, with a lemon stuffed into its cavity. Pierce the lemon's skin a few times to let the juice seep through, but put it in whole. A spritz of lemon juice on green vegetables such as broccoli and spinach, lifts the flavour and replaces some of the vitamin C lost in cooking too. I use up lots of lemons making jam in the strawberry season in spring and early summer. Lemon juice is an essential addition to the soft fruit, to add the pectin that makes it set. Most of my freezer stock of juice will go on that.On hot summer's days the lemon comes into its own. Refreshing, iced, home-made Lemonade garnished with mint to slake your thirst - much healthier than commercial fizzy drinks, despite the sugar. It is additive-free, with loads of Vitamin C and far more delicious than anything that comes in a can.Recipe for Lemonade3 large lemonssugarsoda waterRemove the peel very thinly from the lemons, taking just the yellow zest and leaving all the white pith. A potato peeler works well for this. Put it all into a heavy bottomed pan and cover with 2cm/1" water. Cover with a lid and warm over a very low heat. Do not let the water quite boil or it will bring out the bitterness of the peel. Once the water is strongly flavoured, take off the heat and allow to cool. Strain it into a jug. Squeeze the juice from the lemons and add to the jug, then stir in sugar to taste. It should be sweet and strong flavoured, as you will dilute it to serve. Serve with soda water added, if you like a fizz, or plain iced water and garnish with some slices of lemon and sprigs of mint. The undiluted lemonade keeps for several days in the fridge.Lemons are a great health boost in winter, adding essential Vitamin C to the diet, to help fight off colds and flu. They also help expel mucus, so are excellent for chesty colds and coughs. My son, who has a tendency to asthma, has a cup of hot honey and lemon every morning, which he luckily likes - 1 teaspoon of good raw honey and a tablespoon of lemon juice with hot water poured over - which helps keep his chest clear in winter.I recently learned a housekeeping tip from Morocco: use a lemon to clean copper and brass. Just rub the cut edge over brass bedknobs or those wonderful Moroccan door plates to bring up a shine, then buff with a soft cloth. So if a cake recipe calls for baking powder, make sure you don't mistake this with baking soda.So what is the difference? Here are some quick notes that you should understand to ensure your success in dessert making and home baking.* What is Baking Soda?Also called Bicarbonate of Soda (NaHCO3), baking soda is pure 'Sodium Bicarbonate'.How does it work?It reacts when it comes in contact with liquid acids in recipes and produces gasses, carbon dioxide. You will notice that any recipes with baking soda will also have a liquid acid ingredient, such as lemon juice, honey, buttermilk, brown sugar, fruits, etc.It is this 'fizzy' chemical reaction with liquid acids that creates the necessary rising in your dessert recipes.The chemical reaction of baking soda happens instantly the liquid acid ingredients are added to it, therefore you need to make sure that you bake your cakes or desserts almost instantly and do not allow batter to sit and "flop".Baking soda is used in fizzy soda drinks, so you can remember this to for how the bubbles quickly dissipate and disappear. Trick is to have all your ingredients measured and prepared before mixing and getting your batters into the oven straight after mixing.Test for Usage: Mix about 1 teaspoon of baking soda with about 4 teaspoons of vinegar. It should bubble like fizzy drinks.* What is Baking Powder?Baking powder is a dry acid and is actually a combination of baking soda with other key ingredients.How does it work?Baking powders are called a "double acting" leavening agent because if its difference to the baking soda. Place berries on cutting surface, pointed end facing up. With a sharp knife, carefully slice each berry in half vertically to within a 1/4 inch of base. Cut each half into three wedges to form 6 petals. (Don't slice through the base.) Pull petals apart slightly. In a small bowl, combine light cream cheese, powdered sugar and light sour cream; beat until light and fluffy. With a pastry bag and star tip or small spoon, fill strawberries with light cream cheese mixture. Note: A zipper sandwich bag can be used instead of a pastry bag by filling with light cream cheese mixture and squeezing out excess air before sealing. Carefully cut one corner off of the bottom of the bag. Variation: Use strawberry flavored light cream cheese for added sweetness. ~*~ Strawberry Leather 3 cups fresh strawberries * 1 Tbsp. lemon juice 1 Tbsp. light corn syrup Place strawberries in a blender and process until smooth. Measure 2 cups of strawberry puree. Stir in lemon juice and light corn syrup. Line a 15x10 inch jellyroll pan with heavy-duty plastic wrap and tape plastic wrap to the pan at the corners. Pour strawberry mixture in prepared pan and spread thin, leaving 1 inch on all sides. You can adjust this to fit your dehydrator or another pan, be sure it is spread thin on the pan. Dry in an oven at 150 or a dehydrator for 7-8 hours or until surface is no longer sticky. Remove leather from pan while still warm and roll up jellyroll fashion. In a large bowl, combine flour, I can't believe it's not butter, and nuts; mix until blended. Press mixture on bottom of 12-inch pizza pan. Bake 10 minutes. Immediately sprinkle hot crust with sugar free toffee, distributing evenly over crust. Set aside to cool. Combine light cream cheese and powdered sugar; beat until blended and smooth. I wanted to state here, from personal experience, that I believe that the Fat Loss for Idiots program is the best weight loss plan out there these days. I've tried many, and you may have, too. I go out and have greasy pizza, bacon cheeseburgers, french fries, fried chicken, and Black Forest cake. I barely notice the discipline I need for 11 days because I get to look forward to those three "wild" days!- I've also found myself getting healthier in one other way - I feel more energized. All of my body's systems seem to be working better now. And I chalk this up to all the water I drink now. Yes, I have learned to love the taste of tasteless water (sometimes I had real lemon juice but that's all). This is also part of the Fat Loss for Idiots program, and let me tell you I don't miss sodas or sugared up fruit punch one bit (besides, I can drink those things on my three days "off"). I found out that the majority of modern people are dehydrated - but I'm no longer one of them.But this is supposed to be a weight loss plan, right? So, is it working for me? Yes, it is. If a little grease stain remains sprinkle on baking soda and let sit overnight before vacuuming which will remove the grease residue and deodorize at the same time! If colored wax leaves a stain, blot with spot remover or carpet cleaner, following label directions.CHIMNEY: To keep your chimney clean, throw a handful of salt on the fire.CHROME: To remove rust from chrome, wipe it with aluminum foil dipped in Coke. If the color remains behind, like red usually does, wet a cloth with bleach and wipe.DEODORIZE: dishes, pans, cutting boards or utensils with those same pungent odors, simply add 1/4 cup of lemon juice to your dishwater.FIREPLACE SOOT ODOR: To diminish and remove this odor, after you clean out the ashes, place a shallow pan of baking soda for a few hours or overnight in the fireplace.FISH OR OTHER SPOILED FOOD ODOR: Place a bowl of white vinegar on the counter for a few hours. To clean baked-on food quickly, simply fill a measuring cup full of water and turn the microwave on for about 1-2 minute, until you see the water boiling. The moisture makes all the old food easily wipe off!MOTHBALL SUBSTITUTE: Take your leftover soap slivers and put them in a vented plastic bag. You place the bag with seasonal clothes before packing them away. Not only will the scent prevent them from moth harm but also they'll smell great when you pull them out.PAINT ON CARPET: Spray with Windex and wipe clean.PERMENANT MARKER ON CARPET: Dab a washcloth soaked in rubbing alcohol onto the marker stain. Do not rub it - just blot it - rotating the cloth to a clean spot every time.PET URINE ON CARPET: First, blot up what you can with paper towels. Mix one teaspoon mild dish-washing detergent in one cup warm water, dip a clean towel in the liquid and, working from outside in, dab at stain. Do not over wet. Rinse with fresh water and blot dry. Next, add on-third cup white vinegar with two-thirds cup water and dab on stain. Rinse with water; blot until dry. Once area is totally dry (after at least 24 hours), sprinkle entire carpet with baking soda or rug deodorizer. Vacuum after a few hours.PHOTOS STUCK TOGETHER: With a hair dryer on low, slowly melt them apart.ROACH PROBLEM: Combine equal parts boric acid (a powder sold in hardware stores and drugstores) and sugar, mix well. Sprinkle in crevices and, if building or remodeling, between walls before putting up plaster board. Put the powder in jar lids; place lids behind the fridge and under sinks. Caution: Keep mixture away from children and pets. I have tried everything from CLR, Comet, to Clorox - you name it, I've tried it. Today I decided to try something different. I found a bottle of Resolve spot remover for carpet and fabric. I figured "Why not? I have tried everything else." All I did was spray the Resolve on the shower and with no effort ran a dish sponge over it and rinsed and every bit of the soap scum came off.SMELLY COOKING HANDS: Simply rub your hands over a stainless steel utensil under running water. This works especially well for the odor of garlic, onions or fish.SMELLY SNEAKERS: Simply fill knee-high stockings with unused litter, tie the ends and tuck them in overnight for a quick refresh. Add baby powder, too! Another refresher for smelly sneakers is to simply take a few teaspoons of baking soda and put in the center of a cotton cloth. Tie the cloth and rubber band the edges securely creating a baking soda sachet, which you put in the shoes overnight as well. These sachets can be used over and over in any kind of shoe.SOUR SPONGE: Soak the sponge in lemon juice and rinse it out. This will remove the odor for good but keep in mind that it is important to either dispose of, microwave, or run your sponge through your dishwasher regularly to keep bacteria from growing.STAINS IN PLASTIC STORAGE CONTAINERS: Use a baking soda paste (baking soda and water) and rub into the stain. You can then rinse with vinegar (optional) and wash normally. Another method is to place container outside on a nice sunny day and the sun actually bleaches the stain out. To avoid stains in the first place, spray container with cooking spray before putting things in it that stain i.e. spaghetti sauce.STICKERS, DECALS, AND GLUE: To remove them from furniture, glass, plastic, etc. saturate with vegetable oil and rub off.TARNISHED SIVERWARE: Line a cake pan with aluminum foil. Fill with water and add 1 Tbs. of baking soda per 2 cups of water. Heat to 150 degrees. Lay silverware in pan, touching aluminum foil. Watch the stains disappear!TRASH BAG IDEA: Save money on trash bags by reusing plastic grocery bags. Use them in all your trash cans. To keep them from slipping down, affix a plastic, self-adhesive hook to both sides of the inside of the trash can. Hang the shopping bag from the hooks.WHITE HEAT MARKS AND WATER RINGS ON WOOD: If the wood has a good finish (don't try on bare wood), mix equal parts of baking soda and regular white, non-gel toothpaste. Lightly dampen corner of a clean, soft white cloth with water and dip into the paste. With circular motion gently buff the marks for a few minutes. Wipe area clean, and buff to a shine. Follow with furniture polish. (If rings remain after buffing five minutes or so, they may have penetrated the wood; you might have to refinish the piece). If that doesn't work, dip a cloth in vegetable oil, then in cigarette ashes, then rub it over the mark. Another method is to rub real mayonnaise onto the stain, allow to sit overnight, then wipe with a dry towel.

Dry Ingredients:Citric AcidIt is a white substance like powder. Citric acid is not Vitamin C. It is the substance responsible for the tart taste of citrus fruits like lemons, limes and gooseberries. The acid is extracted from the fruit juice and chemically processed to be transformed from liquid to solid. As a solid substance, it has many uses such as metal polish and flavoring for foods and beverages. For the bath bomb, you need only 2 tablespoons. CornstarchThis is another powdery substance but of finer crystals. It comes from the pulverized white heart of the corn kernel. It is used to thicken sauces and fillings give pastries a delicate texture. You also need 2 tablespoons of this. Baking sodaThis is a rising agent, activated by mixing with acid. When mixed with acidic liquid like sour milk, yogurt and lemon juice, baking soda produces gases that make a flour mixture rise. This is the secret to our bomb! You will need 1/4 C of this.2. Wet Ingredients:Essential oilOils extracted from plants and responsible for the plants' odors. These are found in the pit, flowers, leaves and trunk of the plant. They are used in perfumes, food flavor, and drugs. The most common way of extracting them is to grind and press large amounts of plant parts until the oils come out. The oils may also be extracted by distilling with steam. Because very large batches produce only a small amount of highly concentrated product, essential oils are commercially sold in small bottles. The oil is potent that it is used in drops or teaspoons. It should be packed in dark-colored bottles as the oil loses its efficacy when exposed to light. To be sure that you are buying high quality essential oil, smell it before buying. When the aroma is very strong, almost overpowering, then it is a good product. Common essential oils are: dill, cardamom, wintergreen, cinnamon, camphor, peppermint, spearmint, thyme, clove, eucalyptus, jasmine, lilac, vanilla, rose, almond and lemon. For this recipe, you need 1/4 teaspoon.Food colorNatural and synthetic dyes that can be eaten and used to color foods such as beverages, cake icing and candies. The most familiar form of food coloring is liquid, though there are also powder and paste varieties. Like essential oils, food coloring is very concentrated so only very little is used at a time. For this recipe, use 4-6 drops.Vegetable Or Nut Oilto hold everything together, use base oil extracted from plant sources like vegetable and nuts. These plants are odorless and widely available, thus generate more oil and cost less than essential oils. Examples are almond, hazelnut, rapeseed, safflower, canola, olive and coconut oils. Use 3 tablespoons for this recipe.3. Preperation Tools:- Mixing Bowl- Small cup- Plastic Mold- Water-proof and colorful wraps- Ties- Watertight containers4. Directions: - Sieve all dry ingredients to make sure there are no lumps formed in the mixture. - Mix all the dry ingredients together with a fork to make sure that there is an even distribution each of the ingredients in the mix. For added refinement, you may sieve them into the mixing bowl, altogether. - In a different bowl or a small cup, mix the wet ingredients: base oil, essential oil, and food coloring.- Slowly add the oil mixture into the dry ingredients, making sure to mix very well as you add them together. At this point, it is safe to use your dry hands so you can feel the right consistency. You need not use up all the oil mixture. Stop adding as soon as the combination forms a lump. Too much of the oil mixture can make your bath bomb too wet, and not hold together.- Press the mixture onto the plastic molds. They will be hardened within 2-3 hours though allow a day or two before storing them. If you live in a very humid area, you may choose to bake the bath bombs in a 200-degree oven to really dry them out. - Wrap the balls in colorful paper and store in watertight container, in a dry area of your bathroom. You may also give them away as gifts to share the sizzling experience with family and friends.
